ABOUT THE DISTILLERY
The Kyoto Distillery was established in 2014 in the south of Kyoto City with passions to produce one of a kind gin, packed with arts, culture and the history of an ancient city.
In October 2025, we begun a new journey with a state-of-the-art, fossil free facility, which is part of the plan to increase production capacity to grow further.
ABOUT THE FACILITY
Equipped with four 1,000L pot stills manufactured by CARL, a German company with over 150 years of craftsmanship. Two smaller stills (140L and 450L) from the previous site will also be utilized for trials and small-batch production.
The new facility operates as a fully fossil-free distillery. Its highly efficient boiler is powered entirely by electricity generated from renewable energy sources.
ABOUT THE PRODUCTION
Most production processes have been upgraded to a semi-automated system, greatly enhancing both precision and safety. Distillers continue to collaborate closely with the engineers, devoting significant attention to refine each production step.
